The name “Banh xeo” comes from the sound made when pouring the batter. When the baker puts a ladle of batter into a hot oiled pan, a sizzling sound (xèo xèo) is heard and lasts until the cake is almost cooked. From then on, this traditional cake has been called Banh xeo.
