How to make spicy tamarind jam

Ingredients for making spicy tamarind jam

 Raw living: 1kg

 Salt: 30g

 Ground chili: 5g

 Sugar: 500g

 

How to make spicy tamarind jam

Prepare raw tamarind
Wash 1kg of raw tamarind under water to remove dirt and impurities. Remove the tamarind from the water and let it drain; you can place the tamarind in a mesh basket to allow the water to drain easily.

Place the washed tamarind into a plastic bag or food container. Place the tamarind in the freezer and leave it overnight to let it freeze solid.

Take the frozen tamarind out of the freezer and leave it out to thaw for about 2 hours. The tamarind will be easy to peel after it has thawed.

Use a knife to peel the tamarind. Cut from the top of the tamarind and cut downwards along the surface of the tamarind to remove the outer peel. Peel carefully so as not to damage the tamarind flesh inside.

Prepare 1 liter of water and add 1 tablespoon of salt, stir well for the salt to dissolve in the water. 

Put the peeled tamarind into a bowl of salt water and soak for 1 hour.

Use a knife to make a cut along the left side of the tamarind, creating a slit along the length of the fruit. Next, remove all the tamarind seeds by using the tip of the knife or your fingers to take out each seed one by one.

After removing all the seeds, put the tamarind into a basin of salt water again.

Rinse the tamarind with clean water 4-5 times to remove the remaining salty and sour taste on the surface of the tamarind.

 

Marinate with fresh tamarind

Place the washed and cleaned tamarind into a clean bowl. Then, pour 500g of sugar into the bowl containing the tamarind and mix well, ensuring the sugar is evenly coated on the surface of the tamarind.

Use plastic wrap or an airtight lid to tightly cover the bowl and marinate the tamarind for about 6 hours.

Make tamarind jam

Place the pan on the stove and heat it up. Add the tamarind-marinated sugar water into the pan.

Boil the sugar water over high heat until it boils.

When the water has boiled, lower the heat to maintain a gentle simmer. 

Add all of the marinated tamarind into the pan. Stir continuously so that the sugar water absorbs evenly into the tamarind. Continue to stir for about 10 minutes.

Then, add 1 teaspoon of ground chili and 1 teaspoon of salt to the pan. Stir well so that the mixture of ground chili and salt is evenly mixed into the tamarind. Continue to stir for about 5 more minutes, then turn off the heat.

Remove the tamarind from the pan onto a rack or tray. Place the tamarind in direct sunlight for about 3-4 hours to let it dry.
