  • Pomelo peel: 500g 
  • White granulated sugar: 300g 
  • Salt
  • Clear lime water: 1 bowl

Preparing the ingredients

After buying, you can trim off the white part of the pomelo peel if it is too thick. Then, wash it and slice the peel into bite-sized strips. If you want the jam to have a fresh green color, choose young pomelo peel.

To make the pomelo peel soft and reduce bitterness, you can do the following: Place the pomelo peel in a bowl, then rub it with 1 teaspoon of salt for a few minutes. Next, wash the pomelo peel many times with clean water to remove salt and remaining substances.

Alternatively, you can also soak the pomelo peel in lime water for about 4 hours, then take it out and wash it several times with water.

Boiling the pomelo

Boil a pot of water and add 1 teaspoon of salt. When the water boils, put the pomelo peel in and boil for about 3 minutes.

Remove the pomelo peel from the pot, pour out the water, and add clean water to the pot to continue the boiling process. Repeat the above process about 2-3 times so that the pomelo peel reduces its bitterness. Each time you boil, boil the water, add the pomelo peel to boil for 3 minutes, then remove it and change the clean water to continue boiling.

After boiling, soak the pomelo peel in a bowl of cold water for about 5 minutes. Remove the pomelo peel from the cold water bowl and gently squeeze to remove some of the water.

 

Marinating the pomelo

Put the processed pomelo peel into a large bowl, then add 300g of sugar into the bowl. Mix the pomelo peel and sugar well to ensure that the sugar covers the entire pomelo peel. Marinate the pomelo peel in the bowl for about 4 hours so that the peel absorbs the sugar.

 

Stir-frying the pomelo

Place a pan on the stove over medium heat. Pour the mixture of marinated pomelo peel and sugar into the pan. Stir occasionally to ensure the jam is cooked evenly and does not burn.

When the sugar water starts to run low, lower the heat to the lowest setting and continue to stir constantly. Continue to stir-fry the jam over the lowest heat until the jam is completely dry.

After the jam is completely dry, turn off the heat, but continue to stir the jam in the pot for a few more minutes so the jam is completely dry.

Wait for the jam to cool completely before packing. You can put the jam in a zip bag or a clean jar, cover it tightly to store.
