  •  Mature winter melon: 400g
  •  White sugar: 400g
  •  Alum: 14g
  •  Slaked lime: 30g
  •  Colorless vanilla: 1 tube

Processing winter melon jam

Mixing alum water and lime water

Prepare alum water: Mix 4 liters of water with alum and leave overnight. Ensure the alum is completely dissolved in the water.

Prepare lime water: Mix 4 liters of water with slaked lime and leave overnight. The lime residue will settle at the bottom. Do not stir to dissolve the lime residue. Then, separate the water on top and discard the lime residue.

Soak the winter melon: Pour 2 liters of the prepared alum water into a separate bowl to soak the winter melon. Ensure the winter melon is evenly soaked in the alum water.

Boil the melon: Use the remaining water after separating the lime residue to boil the melon. Boil the water over low heat, then put the melon into the boiling water and boil until the melon is soft and cooked.

Marinate the winter melon

Put the rinsed melon into a large bowl. Pour sugar into the bowl and mix the melon with the sugar evenly. Ensure the melon is evenly coated by the sugar layer. After mixing the sugar and melon, use food wrap or a tight lid to seal the bowl. Place the sealed bowl in a cool place and leave it overnight.

Complete

Pour all the sugar and melon in the bowl into a pan. Place the pan on the stove and turn on high heat. When the water in the pan boils, add a few drops of vanilla. This will add flavor to the winter melon jam. Turn the heat down to medium and stir the melon continuously in the pan to ensure the sugar does not burn.

When the sugar water in the pan thickens, turn the heat to low and continue stirring the melon.

When the sugar water in the pan thickens, turn the heat to low and continue stirring the melon. During this process, the sugar water will gradually dry and begin to stick to the melon, forming a white layer on the surface of the melon.

Continue to stir the melon until the sugar water is completely dry and sticks to the melon. This process can take from 20 to 25 minutes, depending on the thickness of the sugar water and the size of the melon.
