Technical Process to Create Bao Minh Che Lam
- Raw material preparation: Old ginger is cleaned and pounded to extract the full spicy essence. Golden flower sticky rice grains are carefully selected.
- Whole grain roasting technique: The golden flower sticky rice grains are applied with a whole grain roasting technique, emitting a characteristic aroma and retaining nutrients along with the natural sweetness of the sticky rice grain. Then, the rice is ground and cooked. Thanks to the family secret, Che Lam cake retains its softness and traditional flavor.
- Sugar mixing & Cooking the core: Malt and refined sugar are melted and “mixed” in an accurate ratio with aromatic ginger water. The process of cooking the cake core requires skill so that the mixture reaches a chewy consistency, neither too hard nor too soft, creating a perfectly balanced chewiness & smoothness.
- Shaping & Finishing: The smooth, chewy cake block is rolled flat and covered with a layer of dry roasted sticky rice flour to retain moisture inside. Each piece Che Lam is cut squarely and packed in specialized packaging to help retain the rustic flavor as if it had just come out of the oven.
