How to make Pia cake
Ingredients:
- 500g pork fat
- 200g durian
- Banh deo flour, cornstarch
- Number 8 wheat flour
- 50g winter melon jam
- 100g peeled mung beans
- 50g cooking oil
- 1 chicken egg
- 10 salted duck eggs
- Salt
- Rock sugar
- 100g granulated sugar
Preparation method:
Step 1: Processing pork fat
- After buying pork fat, wash it clean with water. Fry 300g of fat to make the cake more fragrant and greasy.
- Place a pot of boiling water on the stove, add 200g of diced pork fat and boil until cooked. Then, remove and let it dry completely.
- After the pork fat is cooked, put it in a bowl with 100g of granulated sugar and 1 tablespoon of salt. Mix well so the pork fat absorbs the seasonings, then let it air dry for 3 days.
- After drying, remove the sugar and salt around the pork fat. If you like, you can add winter melon jam to increase the richness of the cake filling.
Step 2: Cook the mung bean filling
- Puree 100g of mung beans with 60g of rock sugar to create a smooth paste.
- Prepare a non-stick pan and pour the freshly pureed bean mixture into it. Add 25g of winter melon jam and a pinch of salt. Then, use a spoon to stir continuously, ensuring the mixture is cooked evenly and dried for about 15 – 20 minutes.
- Next, pour 35g of sugar syrup into the pan and cook until the mixture thickens. Then, add 20g of banh deo flour and 10g of cornstarch, continue cooking for another 15 minutes.
- When finished, turn off the heat and let the mixture cool. Then, place it in an airtight container to avoid drying.
- After the mung bean filling is cooked, divide it into equal parts. Each part should weigh about 45g.

Step 3: Processing durian
- Mash the durian with 50g of rock sugar, put it in a pan and cook for 5 – 7 minutes for the sugar to dissolve.
- Scoop 3 tablespoons of durian into the mung bean filling mixture above.
- The remaining durian should be mixed with 25g of winter melon jam and 50g of sugared pork fat separately to wrap the cake filling.
- Divide the durian filling into equal parts, each part weighing about 15g.
Step 4: Make the crust & inner dough
Crust part
- Dissolve 50g of sugar in 90ml of filtered water. Then mix well with 200g of flour, 3g of salt, and a little cooking oil. Mix the mixture well and then add a little water to make the dough less dry.
- Mix until a smooth, cohesive dough is obtained, then wrap it tightly with food wrap and let it rest for about 30 minutes.
- After resting the dough, divide it into equal parts weighing about 35g.
Inner dough part
- Prepare a large bowl and pour 120g of flour and 40g of cooking oil, mix well and let it rest covered for about 30 minutes.
- After resting, divide the dough into equal parts, each weighing about 16g.
Step 5: Shape the cake filling
- Roll the mung bean filling into a ball, use your finger to press hard to create a large indentation, then place the durian filling ball in the center.
- Skillfully smooth the mung bean filling to tightly wrap the durian part and place a salted egg yolk on top.
- Flatten the crust dough ball. Press the inner dough ball very thin and place it on top of the crust dough. Then, press the two parts of the dough together very firmly.

- Roll them up together and roll again.
- Place a filling ball in the middle of the dough piece, skillfully shape it gently with your hands, smoothing the edges of the cake slowly until the crust completely covers the filling.
- Place the cake face down, arrange evenly on a baking tray, and proceed to bake the cake.

Step 6: Baking Pia cake
- Preheat the oven for about 10 – 15 minutes at 200 degrees Celsius to control a stable temperature throughout the baking process.
- Bake the cake at 200 degrees Celsius for 15 minutes. Then open the oven lid and brush a thin layer of chicken egg yolk on the surface of the cake.
- Continue baking for the second time at 170 – 180 degrees Celsius for about 5 – 7 minutes. Then let it cool and you can enjoy it right away!
The resulting Pia cake after baking will smell fragrant with durian and mung beans. Take a bite and you can immediately feel the golden crispy crust, separated into many layers along with the rich, greasy filling of salted egg. Homemade cakes can be stored for 4 days at room temperature.
