Ingredients for making pineapple jam
Ripe pineapple: 1 fruit
Sugar: 150g
Alum: 5g
How to choose fresh and delicious pineapple
- Choose pineapples with a bright yellow color from the stem to the bottom, or with a few small green spots. Those are the ones that are ripe and sweet.
- You should choose fruits with large eyes and as few eyes as possible so that after peeling, the pineapple still retains a thick flesh.
- Do not choose pineapples that are still green, as these are unripe and sour.
- Pineapples with a short shape (round, plump shape) usually have more flesh than long pineapples (long cylindrical shape).
- To choose a quality pineapple, choose ones that are neither too hard nor too soft. The pineapple should not have mold or water leaking on the skin, as this may indicate that the pineapple is no longer fresh and may be spoiled.

How to make chewy pineapple jam
Preparing the pineapple
After peeling, remove the eyes of the pineapple, then wash the pineapple with water.
Next, cut the pineapple into round slices, with a thickness of 1.2 to 1.5cm.

Use a pineapple corer tool to completely remove the hard pineapple core.
Dissolve 5g of alum in 700ml of water, then soak the pineapple in the alum solution for 6 hours and place it in the refrigerator.
Small tip:
Do not use overly ripe pineapple, as it will be too soft and the jam will not be delicious.
Soak pineapple with alum before making jam to increase the chewiness of the pineapple jam.
Sun-drying and soaking pineapple with sugar
After soaking with alum, take the pineapple out and wash it again with water.
Next, place the washed pineapple pieces out in the sun for about 3 hours to let the pineapple dry a bit.
After the pineapple has become slightly wilted, soak the pineapple with sugar.
Sprinkle 150g of sugar evenly over 300g of pineapple and marinate for 3 to 4 hours, helping the sugar penetrate into the pineapple and create a sweet flavor for the jam.

Cooking pineapple jam
Place the pan on the stove and add the marinated pineapple mixture. Simmer on low heat for about 30-35 minutes until all the sugar has evaporated.
During the cooking process, make sure to stir evenly to avoid burning or sticking to the pan. When the sugar has evaporated, the pineapple jam will have the appropriate sweetness and chewiness.
Finished product
The whole pineapple jam after completion will have a soft and chewy texture and the characteristic sweet flavor of pineapple.
