Delicious and attractive mung bean Com cake
How to make Com cake
Step 1: Pick out bad grains from the Com, rinse with cold water. Soak Com in warm water for 40-45 minutes until soft. The water level should slightly cover the surface of the Com.
Step 2: Soak mung beans in water until soft for about 3 hours, then steam until cooked. Blend the cooked beans with 30g of sugar and a little water until smooth.
Step 3: Put the pureed mung beans, cooking oil, and 1/2 of the glutinous rice flour into a non-stick pan. Place the pan on the stove and stir over low heat until the mung beans become sticky and dry, then add a little pomelo flower extract and stir well to make it fragrant. Remove the beans and cover to set aside.

The soft and fragrant Com cake dish will surely delight everyone
Step 4: Put 300ml of water, 50g of sugar, and pandan leaves into a thick-bottomed pot. Boil until the sugar dissolves, then remove the pandan leaves and add the Com to cook over low heat. Stir constantly to prevent the Com from clumping. Once the Com has dissolved, with no hard grains left and it pulls away from the pot, becoming sticky and thick, it is ready.
Note: If you accidentally add too much water and the mixture is too thin, sprinkle in a little roasted glutinous rice flour to make it drier.
Step 5: Wait for the Com to cool completely before wrapping. Hot Com is difficult to wrap, and placing hot Com directly on a plastic bag is not healthy. Have a bowl of cooking oil ready.
Dip a spoon into cooking oil to prevent sticking, then scoop some Com onto the plastic bag layer. Use the oiled spoon to spread the Com into a square shape.
Next, add a layer of mung beans, then another layer of Com on top. Use the spoon (dipped in oil to prevent sticking) to spread it until it covers the mung beans completely. Fold the plastic bag and shape the edges so the cake becomes a beautiful square.
If you are not used to wrapping and want the Com cake to look better and smoother, you should use a square mold to shape the cake. The cake will taste better if kept in a cool, airy place for 2 days.
