Place all carrots in the prepared lime water and soak for 1-2 hours. After that, take the carrots out and wash several times with clean water to remove lime and residues..
Marinating and stir-frying carrots
Arrange a layer of carrots in a pot and add sugar. Repeat this process until all ingredients are used, and marinate until the sugar is completely dissolved.

Then, soak the grated carrots in the prepared rice washing water for about 6 hours. After soaking, wash the carrots with clean water to remove other impurities.
Boiling carrots
Next, boil water until it bubbles, then add the prepared carrots to the boiling water and boil for about 2 minutes. Boiling carrots for this short time helps them become softer but still retain their natural crispness.
After that, put the boiled carrots in cold ice water to cool them down quickly and keep the carrots crispy.
Marinating with sugar
Next, add 150g of sugar to the grated carrots and stir well to ensure the sugar is evenly distributed. Then, marinate the carrots with sugar for about 4 hours so that the sugar dissolves completely and penetrates into the carrots.
Stir-frying jam
Next, pour the sugar syrup into a pan that has been heated over medium-high heat. When the sugar boils, lower the heat to medium and add the carrots to the pan, then stir evenly so that the carrots are evenly covered by the sugar syrup.

When the sugar syrup has thickened, lower the heat to the lowest setting and add the vanilla tube to create a fragrant scent for the carrot jam. Next, stir quickly so that the jam can dry quickly.
Continue stir-frying for about 5 minutes until the sugar syrup is completely dry and forms a fine powdered sugar layer coating the carrots. After that, turn off the heat and continue to stir for about 5 more minutes to let the carrot jam dry completely.
