We visited Bao Minh Confectionery Joint Stock Company (Nam Thang Long Industrial Zone, Hanoi) right during the Mid-Autumn Festival cake season. Trucks lined up waiting for products, and factory officials and employees worked busily to keep up with the schedule... creating an extremely urgent and enthusiastic atmosphere. Busy and tense, yet the entire factory and production lines still complied with all conditions regarding food safety and hygiene to produce delicious, high-quality batches of cakes and candies.

After a brief introduction to the business and the factory's production line, Ms. Ngo Thi Tinh – General Director of Bao Minh Confectionery Joint Stock Company led us to visit the production area. Looking at the imposing, spacious facilities and synchronized infrastructure, along with the factory's closed production line, we had even more grounds to affirm: Bao Minh is one of the very few traditional confectionery manufacturing businesses that invests in a large-scale factory, modern equipment, and focuses on ensuring food safety and hygiene.

Before the complicated developments of the Covid-19 pandemic, to ensure the health of officials and employees, Ms. Ngo Thi Tinh said: The company attaches great importance to the nutritional regimen for workers, while complying with regulations on epidemic prevention and control of the Ministry of Health. Accordingly, all company officials and employees must wear masks during the entire working process; Areas prone to infection are disinfected regularly; 100% of employees eat lunch at the company's canteen... Especially, the serving platter was replaced by a separate dining tray for each person after the first wave of the pandemic broke out. Sharing with us about this important topic, Mr. Ninh Van Thang – Deputy Head of the Baked Goods Production Team, Bao Minh Confectionery Joint Stock Company said: He has been working here for nearly 12 years. Right from his first day at work, he was thoroughly grasped by the Board of Directors: The work of ensuring food safety and hygiene is always put first at the business. Not only in thought, but that ideology is transformed into the actions of every official and employee of the company.

“Every year we are trained on food safety and hygiene. The regulations on food safety and hygiene are very strict and everyone must comply with a very high sense of responsibility. From the Production Director to each official and employee, they coordinate with each other very smoothly, under the supervision of 3 parties including the team leader, deputy team leader of each team and KCS staff,” this person said.

With his responsibility, Mr. Nguyen Tien Thinh – Head of Technical Department of Bao Minh Confectionery Joint Stock Company told us: To ensure product quality and food safety, his unit combines with the production block to supervise the technique of all production processes, from the input raw material stage to transporting into the warehouse and putting into production (mixing, kneading, shaping, packaging, warehousing...). For example: Regarding raw materials, the company must comply with the conditions specified in the Set of standards for raw materials, finished products and apply ISO 2000 quality procedures, as well as carry out product traceability very clearly and specifically.

Although very busy, the Director in charge of production of the Company, Mai Dinh Luc, also spared us a few minutes to share. According to him: Officials and employees are checked for health and trained in food safety and hygiene knowledge, occupational health and safety, and learn the company's rules and regulations before entering the production block. These tasks are repeated annually (2 times/year). Products and actual processes are built, upgraded, and improved regularly in the direction of maintaining increasingly better product quality. Especially, the company maintains a cross-supervision regime. “Any official, employee, or worker who does not do well will be reminded and corrected to get into order. All these activities and processes are maintained, upgraded, perfected, and developed over time by the Board of Directors, production teams, technical groups, and officials and employees” – Production Director Mai Dinh Luc affirmed.
